Ingredients
- 300 g lamb’s lettuce
- 200 g white mushrooms
- 1 avocado
- 300 g cherry tomatoes
- 1 apple
- 1 tsp sesame oil
- 2 tbsp sunflower seeds
- 1/2 bunch flat leaf parsley
- Juice of 1/2 a lemon
- 2 tbsp apple juice
- 1 tbsp agave nectar
- 4 tbsp olive oil
- Salt
- Pepper

- 2 tbsp sunflower seeds

Wash the lamb’s lettuce and dry it using a salad spinner. Slice the mushrooms. Stone, peel and slice the avocado. Wash, core and finely dice the apple.

To make the dressing, combine the lemon juice, apple juice, agave nectar and oil in a large bowl and season with salt and pepper. Finely chop and stir in the parsley.

Heat the sesame oil in a pan, add the sunflower seeds, toast for around 2 minutes, then remove.

Mix the lamb’s lettuce, mushrooms, avocado, tomatoes and apple with the dressing. Sprinkle the sunflower seeds on top.
