Baked sweet potatoes with vegetables

Ingredients

  • 2 medium sweet potatoes
  • 200 g Broccoli
  • 1 Paprika
  • 1 Zucchini
  • 1 EL Olive oil
  • 1 TL Cumin
  • 1 TL Paprika (sweet)
  • Salt and pepper to taste

Preheat the oven to 200 °C. Wash the sweet potatoes thoroughly, cut into slices and place on a baking tray.

Season with 1 tbsp olive oil, cumin, paprika, salt and pepper and bake for approx. 30 minutes.

While the sweet potatoes are baking, divide the broccoli into florets and cut the peppers and zucchinis into pieces.

Heat the remaining olive oil in a pan and sauté the vegetables fry the vegetables for about 10 minutes until soft. Add the baked Serve the baked sweet potatoes with the vegetables.
