Ingredients
- 150 g Oat flakes
- 50 g Almonds (chopped)
- 50 g Dried apricots (cut into small pieces)
- 30 g Chia seeds
- 2 EL Honey or agave syrup
- 2 EL Coconut oil
- 1 TL Vanilla extract (optional)

Preheat the oven to 180 °C.

Mix the rolled oats, almonds, dried apricots and chia seeds in a bowl.

Gently heat the coconut oil and honey (or agave syrup) in a small pan until the coconut oil has melted and the honey has mixed well.

Add the liquid mixture to the dry ingredients and mix well. Add vanilla extract, if using.

Press the mixture evenly onto a baking tray (lined with baking paper). Bake for 15-20 minutes until the bars are golden brown. Remove from the oven and leave to cool completely, then cut into bars.
