- 200 g Mixed vegetables (peppers, cucumber, tomatoes)

- 1 TL Lemon juice
- Salt and pepper to taste

Cook the quinoa according to the packet instructions and leave to cool.

Dice the avocado and vegetables.

Mix everything together in a bowl and season with olive oil, lemon juice, salt, pepper and herbs.
