Zucchini pasta with avocado pesto

Ingredients

  • 2 medium-sized zucchini (approx. 300 g)
  • 1 ripe avocado
  • 1 EL Lemon juice
  • 1 EL Olive oil
  • 1 Garlic clove
  • 30 g Pine nuts (optionally lightly roasted)
  • 1 Pinch of salt and pepper
  • fresh basil leaves (to taste)

Use a spiral cutter to turn the zucchinis into “noodles”. Alternatively, cut the zucchini into thin strips using a peeler.

Cut the avocado in half, remove the stone and place the flesh in a blender or food processor.

Add the lemon juice, olive oil, garlic, pine nuts, salt, pepper and basil leaves to the avocado and blend until smooth.
